The ice cream cookbook calls these tartufi, which is Italian for "truffle" so I'm told. I guess that is fancier (and shorter) than what these guys really are: chocolate-covered ice cream balls. Whatever you want to call them, they are quite tasty. They are also very quick and easy to make, as long as you don't mind the mess that comes with rolling the ice cream into balls. After that, coating them with chocolate is child's play. There are lots of variations you can try.
