This recipe makes three slabs of dough that are each cut into rectangular cookies. The slabs can be baked one at a time, which leaves a nice stash in the freezer just waiting to be baked. The cookies can be half-dipped in a simple chocolate coating, but I prefer to temper some chocolate for dipping. Before the chocolate firms up, it can be dipped in chopped nuts or crushed peppermint candy.
