A chocolate enrober is a machine used in the confectionery industry to coat a food item with chocolate. The items to be enrobed are placed on a wire mesh belt, which carries the item through a curtain of warm chocolate that fully covers the item in chocolate.
Foods that are coated by enrobers often include pretzels, toffee, pralines, cookies and candy centers. Firm stable centers such as slabbed ganaches, caramels, honeycomb, candied fruit and biscuits are perfect for enrobing. An enrobing machine (or enrober) is essentially a mechanized alternative to hand-dipping.
